Garlic and Mushroom Savory Mince

 

Garlic and Mushroom Savory Mince (serves 1)

Ingredients:

¼ brown onion chopped

1 garlic clove chopped

½ cup mushrooms sliced

½ stalk of celery diced

½ medium carrot peeled and diced

1tbsp extra virgin olive oil

125g extra lean beef mince (raw)

¼ tin of diced tomatoes

1/2tbsp tomato paste (sodium reduced)

30mL beef stock

¼ cup fresh parsley (chopped)

¼ avocado

1 x multigrain sourdough

Method:

  1. Finely dice onion, garlic, mushrooms, celery and carrot.

  2. In a medium frying pan, add the oil and sauté the onion and garlic until tender. Add mince and cook until brown. Stir in mushrooms, celery and carrot. Add tomatoes, tomato paste and stock. Bring to a boil. reduce heat and simmer for 10 minutes or until vegetables are soft.

  3. Chop the parsley and mix through the dish.

  4. Spread avocado on each slice of the toasted bread, and serve with mince. Garnish with any leftover parsley.
